KNUST Highlights Groundbreaking Okra-Based Innovation in Chocolate Production

During a Special Congregation held today, Professor Anthony Andrews highlighted a pioneering innovation from the Department of Food Science and Technology at Kwame Nkrumah University of Science and Technology (KNUST), with the potential to redefine the global chocolate industry.

The breakthrough, led by Professor Jacob K. Agbenorhevi, focuses on the use of pectin extracted from okra as a natural, locally sourced alternative to imported industrial emulsifiers commonly used in chocolate production.

Describing the significance of the research, Professor Andrews noted that the innovation exemplifies how indigenous resources can address global industrial challenges. He emphasized that the development promotes sustainability while reducing dependence on imported additives, thereby positioning Ghana as a leader in food science innovation.

''At the global front, the project positions Ghana not only as a cocoa powerhouse but also as a leader in food science innovation.'' Prof. Andrews stated.

Initial consumer trials of the okra-pectin chocolate have shown promising results, with high levels of acceptance among participants. Notably, the milk chocolate variant received particularly strong ratings, indicating its potential for commercial success.

The initiative is being implemented under the Africa Agri-Food Knowledge Transfer Partnership (AAKTP), a collaborative effort involving KNUST, the University of Health and Allied Sciences (UHAS), and the University of Reading (CPC), with funding support from Innovate UK.

This research further underscores Ghana’s growing influence in global food innovation by leveraging indigenous crops for high-value industrial applications. Professor Andrews reiterated that the project serves as a clear example of how academia can drive transformative change within industry.
